
Capsicum annuum. Also called 'Numex Big Jim' These peppers were developed by the New Mexico State University in the 1970's. Big Jim peppers produce some of the largest peppers in the world. Yields of 8" - 12" long are common, though they can grow larger. Big Jim peppers can range in spiciness, some plants producing mild heat while other can be a bit spicier. A lot of growers pick these while the peppers are still green for use in green chiles. Big Jim pepper plants have green stems, emerald green leaves, and snow white flowers.
